Pizza



The absolute best way in the world to cook pizza is over hot coals.  This is not always possible, but if you have the opportunity to cook pizza over coals, do it.

We make our pizzas from scratch - the base, the sauces, the marinades for the meats, everything where possible.


We have had hits and flops. We have had dough that wouldn't rise, burnt bottoms, soggy bottoms, you name it, we have accomplished it (and they were still devoured!)


The trick is to keep it simple.  Initially we were building super pizzas with lots and lots of toppings - these were great, but they were too much.  Our new rule is less is more.


The dough is really easy to make - you need to have a warm, draft free area to get it to rise. The sauce is simple.  It takes about an hour to build the pizzas - more hands less time (kinda) - some things we prepare the night before (such as our Tandoori chicken).


Pizza is a great social meal - from the building to the eating and then the final sighs of "tummy is full" at the end.  Make a few extra for lunches....and use your left over meats as toppings.


You can cook them in the oven (needs to be hot - about 210deg) or even on the bbq (as long as you have a hood).

Toppings
Where do we start? Use your left over meats first! Here are some of our favourites, some of the combinations are whacky, but delicious. I won't list the normal ones available through the chain stores... these are our ideas:

  • bbq chicken, shallot and camembert
  • meat lovers (salami, ham, chicken, etc)
  • Italian Stallion - salami, olives, sundried tomatoes, fresh basil, red onion, mushrooms
  • Winny's Special - salami, cheese and jalepenos 
  • Vego with anchovies (I know, I know...) all vege I can find, including left over sweet potato, etc - with anchovies and feta
  • tandoori chicken - marinate the chicken in a mixture of greek yoghurt and tandoori paste overnight. Cook the chicken the next day. Do not use above pizza sauce, use left over tandoori sauce as base sauce. Cheese is optional. After cooking top with greek yoghurt and baby spinach leaves
  • garlic prawn - do not use above pizza sauce - make garlic prawns in creamy sauce, use sauce as base sauce
  • rare roast beef with feta and red onion
